Here are some snacks from the Middle East:

IRAQ SNACK

 

MA’MOUNIA DESSERT

INGREDIENTS:

2 cups sugar 1 cup semolina
3 cups water Whipped cream
1 teaspoon lemon juice 1 teaspoon ground cinnamon
1/2 cup sweet butter  


1.         Place sugar and water in a large saucepan and stir constantly over low heat until the sugar dissolves.

2.         Add lemon juice and bring the mixture to a boil.

3.         After the syrup boils, reduce the heat and let it simmer until the syrup thickens slightly (about 10 minutes).

4.         In another saucepan, melt butter and add semolina. Stir until the semolina is lightly fried.

5.         Pour the mixture into the syrup, stirring constantly. Let simmer for another 10 minutes.

6.         Remove the dessert from the heat and let it cool for 20 minutes.

7.         Spoon the ma’mounia into individual bowls. Place a large dollop of whipped cream on top and sprinkle with cinnamon. Serves 8.

Iraqis love this dessert and it dates back to the ninth century!
