Here are some snacks from North Africa:

AFGHANISTAN SNACK

KHATAI COOKIES

INGREDIENTS:

1 1/2 cups white flour 1 cup sugar
3/4 cup corn oil 1 tablespoon crushed cardamom
Pistachio nuts  


TO PREPARE:

1.         Preheat oven to 350 degrees.

2.         Mix the white flour with sugar and cardamom.

3.         Add the corn oil and mix well.

4.         Make the dough into 2” round balls. Pack tightly and place them
on a cookie sheet.

5.         Bake for 15 minutes or until they are lightly browned.

6.         Sprinkle finely ground pistachio nuts on top of the cookies while
still hot.

Most Afghan families eat two main meals a day-—one in the morning and one in the evening. In the summer, it is common to eat outdoors. In the winter, people eat indoors on cushions called toshaks that are placed on a thin mat called a diserkhan. Tables are covered with a liaf, or square blanket, that hangs over people’s legs to keep them warm.
